eating it, but slice it at the last minute.

The best bread is the simple bread (pain de campagne,
tuscan leaf, or baguette) slightly grilled
If you wish something around, try the figs, or caramelized apple
slices, or grapes
About the wine,
you have several possibilities
A soft white wine: Sauternes, Monbazillac, Jurançon, Vendanges
tardives d'Alsace, etc...
A dry white wine: Burgundy, Côtes de Beaune, Champagne
A red wine: Médoc (Margaux, Pauillac), or Madiran or Cahors
