"Sunny Cooking Step by Step"

This is a book of shared pleasures. I wrote it for those who think as I do; for those who do not want to be impressed by Grande Cuisine, but who wish to enjoy dishes they delight in creating. It is a book for all those who feel that the best way to spend a fine evening is to be with close friends around a nice table while enjoying good well-prepared cuisine. And if yourself prepares the dinner, all the better.
You will read two very different sets of texts on these pages. You may be surprised by this difference.
The texts are my memories of our way of life in Provence, kept from more than thirty years of entertaining friends, relatives or business relations. I wrote them for my foreign friends who always wanted to know more about our “art de vivre”.
The recipes, which are very casual and to the point, were written for my son who was a student in the USA, and sent via the Internet. This allowed me to write as I would have spoken to him, with ease and familiarity, a mother to her son.
As he put it, he "did not want to be far from his family's traditional meals for so long."
I sent these recipes according to his requests, which ranged from: "I feel sort of blue" to "I would like to impress the girl next door." I reinvented my own way of cooking for him, made it easier, and explained as much as I could.

You will find the recipes written in my own way. The writing is not academic, but the recipes are mine. I can present them as I wish, and first and foremost, I want them to be easy to follow.

Most importantly, while explaining how to prepare each dish, I try to make clear how it must look like at each important step. Since I know that the products are not the same everywhere, I wanted my son to check and see that a recipe was as it should be before proceeding further. I wanted him to enjoy the flavors and the tastes of the home, even though he was using slightly different products. I wanted him to experience the happiness that I derive from cooking, to feel pride and contentment when a dish is beautifully prepared and the guests enjoy it!

Cooking is not the sort of art to be practiced solemnly. Recipes are not gospels for pious eyes. Cooking is life; it is fun. It is the friend who dips her hands in the flour bag with you. It is your son who comes to help you in the kitchen. It is the trick taught by auntie to give you a better result. It is your friend or husband who tells you how good your food is even if it is not as successful as you planned it.

It is the simple joy to prepare a beautiful table and anticipate the pleasure of your guests; to pick flowers from the garden to enhance your setting; to arrange candles and use china just for the fun of it; to look forward to the pleasure you are going to give and receive and to be happy with what you have created.
